12 tbps Butter 1 cup Sugar ¼ cup Molasses 1 Egg 1 ¾ cup Flour ½ tea Ground Cloves ½ tea Ground Ginger 1 tea Ground Cinnamon ½ tea Salt ½ tea Baking Soda
Melt butter, add sugar and molasses and mix thoroughly. Lightly beat egg and add to butter mixture. Blend well. Sift flour with spices, salt, and baking soda, add to first mixture, and mix well. Batter will be wet. Lay a sheet of foil on a cookie sheet; drop a tablespoon of batter on foil, leaving 3 inches between cookies.
Bake at 350* for 8-10 minutes or until cookies start to darken. Remove while still soft, let cool on foil. Makes 24 large flat, soft chewy, spicy cookies. Anise Toast (Biscotti)
2 ½ cups Flour 2 teas Baking Powder ¼ tea Salt ¼ cup Butter 1 cup Sugar 3 Eggs 1 tbsp Anise Extract
Sift flour, baking powder and salt, set aside. In medium bowl using mixer beat butter and sugar until very light. Add eggs one at a time, and beat well, add anise and mix. Add four mixture and beat at low speed. Grease and flour 3 baking sheets. Divide dough into 3rd onto each baking sheet and with floured hands spread dough into flat oval.
Bake at 350* 15-20 minutes, until pale golden brown. Remove from oven and while on cookie sheet cut into 1” slices on the angle. Turn toasts on side and bake again for another 10-15 minutes. Cool on wire rack.
Optional; melt chocolate chips and spread onto one side of toast.
